Cauliflower & Chive Soup – Slimming World

I can tick off one of my jobs from my to do list.  I’ve made a cauliflower & chive soup.  It’s very easy (as usual) and tasty and syn free.  You can add some low fat yoghurt but I didn’t think it needed it.

Ingredients: cauliflower florets from one cauliflower, 1 large potato diced, 1 onion diced, Frylight, 650ml vegetable stock, chopped chives, salt & pepper


  1. Soften the onion in a frying pan for a few minutes.
  2. Cook the cauliflower and potato for 20 minutes until softened.
  3. Add the onion to the cauliflower mixture.
  4. Add the vegetable stock.
  5. Blitz with the hand blender.
  6. Add chives, salt and pepper to taste.

Broccoli & Horseradish Soup – Slimming World

A very filling and nutritious soup.  The horseradish adds a wonderful kick.  The whole pan is about 3 syns and it provides about 6 servings.

Ingredients: Frylight, 1 large onion diced, 1 large potato diced, 1.5 litres of vegetable stock, 1 lime zest & juice, 500g broccoli florets, 1 tbsp parsley, 1 tbsp chives, 2 tbsp horseradish sauce, 4 tbsp low fat yoghurt (or fromage frais)


  1. Cook the onion and potato in Frylight until softened.
  2. Add the lime and stock, bring to the boil and simmer for 30 minutes.
  3. Meanwhile cook the broccoli in a separate pan for around 10 minutes.
  4. Blend the potato mixture until smooth.
  5. Add the broccoli and blend a little more (I like to leave some visible bits of broccoli)
  6. Add the parsley, chives horseradish sauce and yoghurt.  Stir well.
  7. Serve.

Yellow Split Pea soup with Bacon – Slimming World

Syn free!

A hearty and filling soup.  It’s very easy to make and a great chance for me to cook with celeriac for once.

A great chance to try celeriac in a recipe.

Ingredients: 170g yellow split peas, 1 diced potato, 1 diced onion, 1 diced carrot, 40g of diced celeriac, pinch of white pepper, 1 tsp chicken Bovril, pinch of turmeric, 1 bay leaf, 1tsp garlic powder, 350g grilled bacon diced


  1. Put 100g of the split peas and all the other ingredients, except bacon, in to a pan.
  2. Make up 375ml of stock using 1 tsp of chicken Bovril and add to the pan.

    Don’t forget to hold back 70g of the yellow split peas for later.
  3. Bring to the boil and simmer for 20 minutes.
  4. Remove from the heat, take out the bay leaf and blend with a hand blender.

    Take the bay leaf out before blending it.
  5. Add 300ml of boiling water, the last 70g of split peas and the bacon and cook on a medium/low heat for 20 minutes.

Easy Celery Soup – Slimming World

Very simple to make!

Here’s another Slimming World friendly soup.  It’s syn free.  It’s also so easy to make too which helps!



Onion, Bovril, celery, garlic & water

Ingredients: 300g chopped celery, 2 small onions diced, Frylight, 2 tsp chicken Bovril, 1tsp garlic powder (or 1 clove of garlic), 400ml boiling water



  1. Lightly fry the celery, onion and garlic in Frylight until tender.IMG_20160223_174303.JPG
  2. Add 2tsp of Bovril and 400ml boiling water to the pan.
  3. Bring to the boil and then simmer for 15-20 minutes.
  4. Blitz with a hand blender…….easy!

Carrot & Coriander Soup – Slimming World

Here’s a great recipe for carrot and coriander soup.

Wonky Veg?  Perfect in soup!

Ingredients: Bag of carrots (about 1kg), 2 tsp Bovril Chicken, 2 tbsp Dried Coriander, 2 Onions, 2 Potatoes, Salt & Pepper.


  1. Make up 700ml of chicken stock.  I used boiling water and added 2 tsp of Bovril Chicken.
  2. Chopped up the carrots, onions and potatoes.
  3. Put the vegetables and stock in a pan.
  4. Add salt, pepper and about 2 tbsp of dried coriander.
  5. Bring to the boil.
  6. Simmer for 30 minutes.
  7. Blitz with a hand blender.  I like to do this after it’s cooled so I don’t scald myself.
